Super Bowl Sunday Smorgasbord

One of the best things about Super Bowl Sunday is the gatherings of people to enjoy one anothers’ company, and of course, all the foods!

However, this generally turns into way overindulging in things, most of which are unhealthy.

So, rather than sabotage all the progress you’ve made towards achieving your healthiest you, why not create a spread that’s both Super Bowl-worthy AND healthy?!  Yes, it can be done.  Yes, it can include comfort-food faves.  And yes, it can be awesome!

Snacks

First up: snacks.  It’s all about the grazing on Super Sunday.  Instead of binging on a bunch of junk food, why not get all your veggies and protein?  And bonus: you can eat more of it!

Dippin’ stuff

Salsa, guacamole and hummus: you can buy organic, clean brands of these in your grocery store, read your labels and be sure they don’t have added sugars, starches or soy.  I love Mitchell’s Fresh salsa, which I find in the produce section of my store.  It does have regular vinegar, which I try to have only apple cider vinegar, but has the best of all the other ingredients.  Another great, clean brand is La Mexicana, but my store only carries medium and hot, and, well, I am a sissy when it comes to spicy stuff—and the medium is pretty spicy for me.  But if spicy’s your jam, grab it, it’s delish.  Most hummus brands have an organic option in all of their flavors so it’s easy to find exactly what your spread needs.  For guacamole, I’ve found the same, Mitchell’s Fresh has one, as well as Sabra, both tasty as homemade, so you can save yourself some time and focus on things you have to make.

Crunchy stuff

I highly recommend grabbing all kinds of veggies for dipping: cucumbers, carrots, celery, red, green and yellow peppers, pea pods, and grape tomatoes.  Also easy to prep the night before.

As far as chips and other crunchy stuff, there are so many options available in the stores now!  My favorites include Beanitos black (and white) bean, Late July, Siete, and Food Should Taste Good tortilla chips.  Another great option to have on hand are Plant Snacks cassava flour chips, Simple Mills crackers and Chippeas chickpea puffs.  All gluten-free, soy-free, starch-free, and many are grain-free or cleaner grain options.

Main dishes

Now on to the main event!  Things that can be made in large batches earlier in the day and kept warm in the oven or Crock Pots are definitely the winners here.

In case you have non-chili eaters, you can offer a taco bar instead! Get your taco meat recipe here! 

The beauty of these two options: all of your healthy tortilla chips as snacks work for these main courses as well! And then add an assortment of salad fixins like greens, tomatoes, olives, etc.

Something you can make to offer with chili and/or taco meat:  another crowd-pleaser: mac n cheese!!!  I personally LOVE to mix either of these options with mac n cheese, and I’m sure at least a couple of your peeps will, too. Something else that’s always a hit with a crowd: spaghetti and meatballs, so why not offer a pasta and meatballs bar?  You can make your meatballs up way ahead of time, because these beauties get made raw, frozen and then cooked when you’re ready for them, either in the instant pot or crock pot! I’ve got a great recipe for you right here. Make up a couple of different brown rice pastas, like macaroni or penne, spaghetti or pad-thai noodles  (but break them up into shorter strands to make it easier to eat).  Toss them in a little bit of olive oil so they aren’t too sticky.

Again, there are a number of great brands of sauce out there with no added sugars or fillers or preservatives.  A couple of my favorite brands are Mezzetta and Paesana, but I’ve noticed some of the mainstream brands have hopped on the clean-ingredients train, so it shouldn’t be hard to find something that would work for you.

A little something sweet?

Finally, sometimes you need something sweet—time was we’d always have bowls of M&Ms to grab handfuls of, pretty much the rest of the night.  Might I suggest mixing up a batch of your own trail mix, with some nuts and seeds of your choosing, Enjoy Life dairy-free chocolate chips, and organic dried cranberries.

Trust me, all these goodies will make a perfect spread for the big game…or any kind of gathering of all your favorite people. And any leftovers are great for packing into lunches for a few more days–and all healthy, clean and nutritious!
