Clean Macaroni and Cheese

That’s right. You heard me. Mac and cheese, though… I mean, really, this has been probably one of the hardest things for me to miss since starting to eat clean. But I hope you know by know, if there’s a way to make it happen, ya girl’s gotchu!!

Behold… Mac. And. Cheese!!

Ingredients:

  • 8 ounces cooked brown rice pasta
  • 1 cup dairy free mozzarella cheese
  • 1 cup dairy free cheddar cheese
  • 1 cup dairy free yogurt
  • 1 teaspoon paprika
  • salt and pepper to taste

Directions:

Combine cheeses and yogurt in a saucepan (or the same pan you cooked the mac in) and cook on low to medium heat until blended. Add paprika. Add cooked pasta. Salt and pepper to taste.

SO. GOOD.

I also added a scoop into my ground turkey veggie soup for lunch today and O. M. G!!! Made it nice and creamy and gave it a nice little bump of much-needed good carbs on a dreary, gray day.
