Taco Salad

Let’s taco ’bout seasoning blends, shall we (see what I did there)? Those packets you can grab at the store are so convenient and easy to use. But flip that baby over and read the ingredients.

Sugar. Starch. Soy. Fillers. Salt, most likely processed to the hilt. Ummm, yeah, no thanks. I’ma just be over here, using my own blend and enjoying my non-inflamed self, thanks anyways.

Friends, all that added stuff in the things you eat are what’s keeping you from achieving your optimum health. Believe me. If nothing else, please, please, please, ditch those packets and make up your own, store it in mason jars and enjoy for months!

I love to throw some taco-seasoned meat on top of a bed of greens and chopped tomatoes, add some olives, salsa and guac, and have me a regular ol’ fiesta!!! This meat can also be put over brown rice tortillas for nachos, added to mac n cheese (yes, trust me on this one–and you’re welcome), made into a tortilla soup if you’d like. And you can sub in whatever ground meat you want: I make it with turkey (and you can’t even tell it isn’t beef), but if you need your red meat fix, go ahead, or sub in chicken.

Here’s how to make it!

Ingredients

Seasoning mix:

  • 6 TBSP chili powder
  • 4 tsp ground cumin
  • 3 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1/8 tsp cayenne pepper (add more for more spice)

Mix all the spices together and store in an airtight container. Use 1-2 Tbsp. in this recipe

  • 1 lb ground turkey
  • 1 onion chopped
  • 1 green pepper chopped
  • 1 (14-15 ounce can diced tomatoes with juice
  • 1 small can tomato paste
  • 1 cup dairy free mozzarella cheese

Instructions
Sautee chopped onion and pepper in a tablespoon of olive oil. Add ground turkey
and brown. Add can of tomatoes and 1-2 tbsp of above seasoning mix. Add tomato
paste and cook to desired consistency. Add mozzarella and allow to melt.
Add to bed of greens of your choice with any desired toppings such as avocado,
clean guacamole and/or salsa, olives, chopped tomatoes, etc.
