Creamy Tomato Chicken Bacon Ranch

Friends, I am not gonna sugar-coat this.  There have been times during my new clean-eating lifestyle that I’ve had some serious cravings and temptations.

Last week was one of those times.  I get an email menu from the in-house deli at work each day, and they’ve added specialty flat-bread pizzas to the selections.  And at least twice every week, one of the varieties is chicken bacon ranch.  Are.  You.  Kidding.  Me.

Well, I decided to take it as a sign from the Universe that I hadn’t revamped a comfort food recipe in a while and I should probably do this one.

I knew I had chicken breast in my freezer, and had just bought some uncured turkey bacon, so I knew I was on to something.

Here’s how to make the magic happen:

Creamy Chicken Bacon Ranch

Ingredients

  • 1 pound chicken breast
  • 8 ounce package uncured turkey bacon
  • 1 can fire roasted tomatoes
  • 16 ounces plain unsweetened dairy free yogurt
  • 1 tablespoon ranch seasoning blend
  • 1-2 teaspoon minced garlic

Instructions

Season chicken breast and place into instant pot for appropriate time (20 mins frozen, 10 mins refrigerated) on pressure cook setting.  Cook bacon in large frying pan until desired texture.  Remove bacon from pan, add all other ingredients.  Chop cooked bacon and add to mixture.  Once chicken cooking cycle is complete, remove from instant pot and cut into cubes or shred.  Add to mixture and allow to simmer for 20 minutes to allow flavors to develop.

Serve over cooked brown rice, mixed veggies, pasta or spiralized veggies.

Can also be used as a pizza topping!

The batch I made was enough to have for several days, for lunches and dinners.  I had it over brown rice and over spiralized zucchini.  Both were delicious!

If you don’t have an Instant pot, you can certainly cook the chicken on the stovetop, and even use the same pan you cook the bacon in so you can still only use one pan.

And if you don’t care for the tomato base, you can use chicken or veggie broth instead.
