Chicken Spinach Artichoke Soup

Today is Super Bowl Sunday, which some could find a challenge when eating clean.

Challenge. Accepted.

I love taking rich, decadent, fat-laden favorites and making them compatible with my clean-eating lifestyle.

This recipe is modified from another I saw. I absolutely LOVE spinach artichoke dip. And soups, especially this time of year, are the best. Once you’ve put all the ingredients together, you let it cook and the flavors blend together–and the longer is stews, the better it tastes. Perfect for game day when you don’t want to be in the kitchen. missing out on all the action.

I started this by cooking the chicken breast in my instant pot for 20 minutes, to make my own fresh all-natural broth. In the meantime, I got the other ingredients together in the stockpot, ready for the shredded chicken and broth once it was done. In 20 minutes’ time, everything was done, the soup was cooking and ready for us to enjoy 30 minutes later. And tasted amazing, just like that favorite dip.

  • 2 tbsp onion powder
  • 3 cloves garlic, minced
  • 1 tbsp Himalayan sea salt
  • 1 tsp fresh ground black pepper
  • 3 large chicken breasts
  • 1 14 ounce can artichoke hearts, drained and chopped
  • 1 cup dairy-free mozzarella cheese
  • 1 cup nutritional yeast
  • 2 tbsp unsweetened almond milk
  • 4 cups fresh spinach, chopped

Season and place chicken breasts into instant pot with 4 cups water and cook on pressure cook setting for 20 minutes.

In a large stock pot, place garlic, onion powder, and chopped artichokes.

Once chicken is finished cooking, shred with 2 forks and put into stock pot. Dump resulting broth from instant pot into stock pot. Add another 2 cups water and bring to boil. Add cheese and nutritional yeast and almond milk, stir until blended. Add salt and pepper. Add chopped spinach and simmer 30 minutes to cook artichokes through and blend flavors.

You could also make this just using the stock pot, using 6 cups of chicken broth, cook the chicken with seasonings, shred and then add the rest of the ingredients.

Best part, you get all that flavor with less than 30 minutes hands-on time, so you can get out of the kitchen and enjoy game day!!
